Recipe: Marinated, Rubbed, and Seared Duck

A simple but delicious method for preparing your duck!

Ingredients

  • 4 duck breasts
  • ½ cup lemon juice
  • ¼ cup orange juice
  • 3 tablespoons soy sauce
  • 2 tablespoons Traeger Fin and Feather seasoning
  • Kosher salt
  • Flour for dusting
  • Olive oil

Procedure

  • Marinate duck breasts for six hours in the refrigerator in a mixture of lemon juice, orange juice, and soy sauce
  • Heat oil in cast-iron skillet on medium heat
  • Season duck breasts
  • Lightly dust in flour
  • Cook on each side for 2 to 3 minutes — this will vary depending on the size of the breast and the type of duck.
